Here I am tapping a birch tree to get some of that wonderful birch sap. It takes a lot more sap to make syrup from a birch than it does from a maple tree though! It takes only 40 gallons of maple sap to make one gallon of syrup, but almost 80 gallons of birch sap to make the same amount. A lot of work!
